Should I add an emoji to the text version?

Only if the plain version feels too cold. Plain text reads as sincere and slightly austere; an emoji softens it. Both work — the plain one is more portable and the emoji one is warmer.

Will the line breaks survive copy and paste?

Why the plain text version often works best

How the plain text renders in different apps

One line per sorry

The default. Each line gets its own row in the chat, so a hundred lines is a hundred rows. This is the version most people picture.
All on one wrapped line

Everything on a single line separated by spaces. The app wraps it into a paragraph. Compact and much harder to scan — which some people prefer.
Centred

Each line centred against the longest one. In a chat this renders as an odd, deliberate-looking block. Striking, but only if the app preserves leading spaces.
With a separator

A comma, pipe or full stop after each sorry. Barely changes the length and makes the repetition look slightly more intentional.

Leading spaces often get stripped
